What labor organizations work with Americans in Central America?

I will be graduating from college in the Spring, and I would like to move to Central America to work with labor union organizers or those active in the labor movement. I speak Spanish, am studying Labor Relations in school and have interned with the NEA and UFCW. I am interested in the labor movement and would like to work/volunteer abroad for a time before I start my career. Do you know how I could go about doing this?
